Chicken Breast with Mustard Crust

Ingredients
- 2 chicken breast fillets
- 2 tbsp coarse Dijon mustard
- 1 tbsp white bread crumbs
- Salt
- Pepper (freshly ground)
- 2 Tomatoes
- 2 tbsp black olives (pitted)
- 1 small Shallot
- 1 tbsp White Wine Vinegar
- 3 tbsp olive oil
- chopped parsley
- 2 sprigs thyme

Season the chicken breast fillets with salt and pepper, spread mustard on them, and sprinkle bread crumbs over the top. Place the thyme sprigs in a small baking dish greased with 1 tbsp oil, lay the chicken fillets on top, and bake in a preheated oven at 180°C for about 12 minutes.

Wash the tomatoes, quarter them, remove seeds, and dice into small cubes. Slice the olives into rounds. Peel and finely dice the shallot.

Combine tomatoes, olives, shallot, and parsley. Whisk together remaining oil with vinegar, salt, and pepper, then mix with the tomato mixture.
