Ingredients

  • 1 Shallot
  • 1 Garlic clove
  • 1 Carrot
  • 1 Parsnip
  • 600 ml Vegetable Broth
  • 120 g rolled oats
  • a pinch ground cumin
  • Pepper
  • 1 tsp lemon juice
  • 0.5 bunch Parsley (10 g)

Instructions

    Peel and chop the shallot and garlic. Clean, wash, and dice the vegetables. Bring the vegetables to a boil in a pot with broth and simmer over medium heat for about 5 minutes. Add the oats, cook for 1 minute, remove from heat, and let soak for 10 minutes. Meanwhile, wash, dry, and chop the parsley.

    Season the soup with cumin, pepper, and lemon juice, serve in two bowls, and garnish with parsley.
