Ingredients
- 2 chicken breast fillets
- Salt
- Pepper (freshly ground)
- 1 tsp chopped thyme leaves
- 1 tsp butter
- 1 tbsp Olive Oil
- 1 bundle rocket
- 1 tbsp balsamic vinegar
- 2 tbsp white wine

Season the chicken breast fillets with salt, pepper and thyme.

Heat olive oil and butter in an oven‑proof skillet and sear the chicken fillets on one side until golden brown. Flip them into a preheated oven at 180°C and bake for about 10 minutes until cooked through.

Wash, dry and trim the rocket leaves.

Remove the finished chicken from the pan, slice diagonally. Deglaze the pan with vinegar and wine, reduce slightly, then spoon over warmed plates. Arrange the sliced chicken and rocket on top.
