Chicken Breast Fillets Stuffed with Broccoli and Cheese

- 4 chicken breast fillets
- 1 clove garlic
- 4 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp light soy sauce
- Pepper
- 0.5 head broccoli
- Salt
- Cayenne pepper
- 4 slices cheddar cheese
- oil (for greasing the grill rack)
- 4 stems cilantro

Peel and finely chop the garlic for the chicken marinade. Mix with olive oil, lemon juice, and light soy sauce; season with pepper. Wash the chicken breast fillets, pat dry, and cut almost through lengthwise so they can be opened like a book. Drizzle the inside and outside of each fillet with the mixture. Let marinate for at least 30 minutes.

Clean and wash the broccoli, cut into florets. Halve the florets lengthwise and blanch in plenty of boiling salted water for 2-4 minutes until al dente. Drain, rinse under cold water, and let drain fully.

Open the fillets and spread the broccoli on the lower half. Season with salt, pepper, and cayenne pepper. Place cheddar slices over the broccoli, then close the fillets again. Lightly season all sides of the meat and grill on a greased rack for 20-25 minutes, turning once.

Alternative: Turn on the oven grill, place the fillets on a greased rack set on a baking sheet, and grill in the middle rack for 20 minutes, turning once.

For serving, wash and dry cilantro. Chop the leaves and sprinkle over the grilled chicken breast fillets.
