Chicken Breast Fillets with Bell Peppers

Ingredients
- 2 chicken breast fillets
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 10 sage leaves
- 1 tbsp Dijon mustard
- salt (pepper)
- 0.5 onion
- 1 red bell pepper
- 1 yellow bell pepper
- 1 Garlic clove
- 1 tbsp honey
- 1 Orange (juice)
Instructions

Slice the chicken breast fillets lengthwise once with a sharp knife.

Whisk 1 tbsp oil with 1 tbsp balsamic vinegar, 2 chopped sage leaves, mustard, a pinch of salt and pepper; spread this mixture over the meat.

Peel the onion and cut it lengthwise into wedges.

Wash, clean, seed the bell peppers and slice them lengthwise into strips.

Heat the remaining oil in a pan and sauté the onion and peppers for about 3 minutes, then squeeze in the garlic, add honey, orange juice, about 3 tbsp water and the rest of the vinegar; stir well and simmer covered for about 5 minutes, tasting as you go.

Turn on the oven grill and place the chicken slices on a lightly oiled baking dish or fire‑proof tray; grill on the middle rack for about 5–7 minutes.

Plate the grilled chicken with the bell pepper mixture and garnish with the remaining sage leaves.
