Ground Meat Feta Loaf in Filo Wrappers with Lemon Sauce

Ingredients

  • 1 old bread roll
  • 150 g sheep cheese (feta)
  • 300 g tomatoes
  • 1 onion
  • 2 Garlic cloves
  • 1 EL oil
  • 50 g Pine nuts
  • 2 TL finely chopped rosemary needles
  • 750 g mixed ground meat
  • 1 egg
  • Salt
  • pepper (ground)
  • 0.5 TL paprika powder
  • 80 g green olives (pitted)
  • 3 sheets filo dough (ca. 150 g, Greek grocery stores)
  • oil
  • 2 EL Butter
  • 1 EL flour
  • 150 ml milk
  • 150 g heavy cream
  • 1 TL grated lemon zest
  • 2 TL lemon juice
  • Salt
  • pepper (ground)
  • 250 g Cherry Tomatoes

Instructions

    Soak the bread roll in lukewarm water. Dice the sheep cheese into small cubes. Blanch the tomatoes for a few seconds, cool them, peel, quarter, seed and dice. Peel the onion and garlic cloves. Finely dice the onion, crush the garlic. Sauté both in hot oil. Drain the bread roll and mix it with ground meat, onion, garlic, rosemary, egg, salt, pepper, paprika. Fold in the sheep cheese, tomatoes, pine nuts and olives, then shape into a long loaf.

    Lay filo sheets on top of each other, wrap the loaf inside and brush with oil. Bake in a preheated oven at 200°C for about 50 minutes, brushing with oil occasionally during baking.

    For the lemon sauce melt butter in a pot, whisk in flour, let it brown briefly, then add cream and milk while stirring and bring to a boil. Season with lemon zest, lemon juice, salt and pepper, then simmer gently for about 10 minutes, stirring occasionally.

    Serve by slicing the loaf and arranging on a plate with the lemon sauce and cherry tomatoes.
