Ingredients

  • 2 Zucchini
  • Salt
  • 4 chicken breast fillets (about 120 g each)
  • 100 g cheddar
  • 1 tbsp freshly chopped mint
  • chili flakes
  • olive oil (for frying)
  • 2 tbsp flour
  • Lemon juice
  • sakura cress (for garnish)

Instructions

    Wash, trim and slice the zucchini lengthwise. Salt and let sit in water for about 10 minutes.

    Rinse the chicken breasts, pat dry and cut a pocket on each side. Slice the cheese and fill the pockets with cheese and mint. Secure with wooden skewers and season with salt and chili. Fry in 2-3 tbsp hot oil in a non-stick pan, browning both sides for about 6 minutes.

    Pat the zucchini dry and dust with flour. In another pan, fry in 3-4 tbsp oil, browning both sides for 2-3 minutes.

    Remove from the pan, plate, drizzle with lemon juice, place one chicken breast on each plate and garnish with cress.
