Chia Pudding with Berry Smoothie

The Chia pudding with berry smoothie from Spoonsparrow is the perfect clean‑eating breakfast for summer.
Ingredients
- 0.5 Vanilla bean
- 200 g soy yogurt alternative
- 200 ml almond milk
- 4 tbsp Maple syrup
- 1 pinch salt
- 50 g Chia seeds
- 350 g berries (blackberries, raspberries, blueberries)
- 1 organic orange (zest and juice)
- 60 g base granola mix (4 tbsp)
- 15 g chopped pistachios (1 tbsp)

Halve the vanilla bean lengthwise and scrape out the seeds with a knife. Mix soy yogurt alternative, almond milk, 3 tbsp maple syrup, vanilla seeds, salt, and chia seeds in a bowl; cover and let sit for at least 2 hours to thicken.

For the smoothie, wash the berries and set aside 100 g for garnish. Combine remaining berries with orange zest and juice in a blender. Add the remaining maple syrup and 3–4 tbsp water. Blend on high until smooth.

Stir the chia pudding well, then pour it into glasses. Spoon the berry smoothie over the pudding. Distribute the reserved berries on top of each glass, sprinkle with granola mix and chopped pistachios.
