The Chia Elderberry Preserve by Spoonsparrow is a delight and comes completely without added gelatinizer!

Ingredients

  • 500 g elderberries
  • 0.5 Organic lemon
  • 3 Tbsp chia seeds
  • 2 tbsp honey

Instructions

    Wash the elderberries, drain them and strip off the stems. Rinse the lemon hot, pat dry and grate about 1 tsp of zest. Slightly mash the berries with a potato masher and bring to a boil while stirring, then add the lemon zest.

    Remove the pot from heat and let the berries cool for about 5 minutes. Add honey and chia seeds and mix well. Let the mixture thicken for about 30 minutes, stirring occasionally. Transfer into jars, store in the refrigerator and use soon.
