Ingredients
- 200 g double cream
- 2 egg yolks
- 100 g sugar
- 20 ml cherry brandy
- 200 g chestnut puree (ready-made, canned)
- 200 g whipping cream
- 8 cooked chestnuts

Whisk the chestnut puree with the double cream. Beat the egg yolks with the sugar and cherry brandy over a gentle simmering water bath until light and frothy; cool in an ice bath. Roughly chop the whole chestnuts.

Beat the cream stiff, then fold it into the egg yolk mixture and lift it into the chestnut cream. Place the chopped chestnuts in a terrine or loaf pan lined with cling film, pour in the parfait, and freeze for 12 hours.

Slice the parfait for serving, arrange on plates, and garnish with mint before serving.
