Red Cabbage Salad with Feta

The red cabbage salad with feta from Spoonsparrow is quick to make and perfect as a light lunch to take away.
Ingredients
- 600 g red cabbage
- 50 ml apple cider vinegar
- 0.5 tsp Salt
- Pepper
- 1 tbsp sesame seeds (15 g)
- 2 tbsp walnut oil
- 1 Pomegranate
- 4 dried dates (pitted)
- 100 g feta cheese (45% fat in dry matter)
- 2 sprigs parsley

Clean the cabbage, quarter it, remove the core, and cut each quarter into 5 cm pieces. Roughly chop with vinegar, salt, a pinch of pepper, sesame seeds, and walnut oil using a food processor; if you don’t have one, grate or finely dice the cabbage. Transfer the salad to a bowl and set aside.

Halve the pomegranate and release the seeds. Slice the dates into rings. Crumble the feta. Wash and dry the parsley, then finely chop the leaves.
