Cherry Parfait

Ingredients

  • 1 Egg white
  • 2 tbsp vanilla sugar
  • 50 g powdered sugar
  • 200 g yogurt
  • 200 g Cream cheese
  • 100 ml whipping cream
  • 250 g sour cherries
  • 100 ml cherry juice
  • 300 g brownies

Instructions

    Beat the egg white and the cream until stiff peaks form. Whisk together the vanilla sugar, powdered sugar, yogurt, and cream cheese until smooth. Fold in the whipped cream and the beaten egg whites. Transfer the mixture to a bowl, cover, and freeze for at least 4 hours.

    For the sauce, wash the cherries, set aside 4 whole cherries, and pit the remaining cherries. Simmer with cherry juice for about 10 minutes, then remove from heat and let cool.

    Take the parfait out of the freezer 5-10 minutes before serving to soften slightly.

    Use a melon baller or spoon to scoop balls from the parfait and layer them in glasses with cubed brownies and cherry sauce. Garnish with the remaining cherries and serve.
