Raspberry Parfait with Vanilla

- 1 Vanilla bean
- 400 ml milk
- 5 egg yolks
- 150 g sugar
- 250 ml heavy cream
- 250 g frozen raspberries
- 150 g fresh raspberries

Line a loaf pan with plastic wrap and place it in the freezer. Split the vanilla bean lengthwise and scrape out the seeds. Bring the milk to a boil with the vanilla seeds. Whisk the egg yolks with 100 g sugar over a hot water bath until frothy. Carefully pour the vanilla milk into the egg mixture and whisk over a cold water bath until chilled. Beat the cream stiffly and fold it into the egg-milk mixture. Pour the vanilla custard into the chilled loaf pan.

Blend the raspberries with the remaining sugar in a blender, strain through a fine sieve, and spread over the vanilla custard. Use a fork to gently lift the raspberry layer into the custard. Freeze for at least 4 hours. Remove from the freezer, peel off the plastic wrap, slice the parfait into rounds, and serve topped with fresh raspberries.
