Ingredients

  • 150 g cherries (fresh or from jar)
  • 1 lime (or ½ untreated lemon as substitute)
  • oil (for greasing)
  • 200 g wheat flour Type 1050
  • 2 tsp Baking powder
  • 150 g softened butter
  • 150 g sugar
  • 1 packet vanilla sugar
  • 1 egg
  • 100 g kefir
  • powdered sugar (for dusting)
  • 24 paper muffin cups

Instructions

    Preheat oven to 175°C. Wash and pit fresh cherries; drain jarred cherries well. Rinse lime hot, dry, grate zest finely and squeeze juice. Place two paper cups together in each mold. Mix flour and baking powder. Cream butter with sugar, vanilla sugar and egg.

    Add lime zest, 2 tbsp lime juice and kefir. Quickly stir in the flour mixture. Fold in cherries. Fill paper cups to two‑thirds full. Bake in oven for 20–25 minutes until golden brown. Brush muffins with remaining lime juice and let cool briefly. Let cherry muffins cool completely. Before serving dust lightly with powdered sugar.
