Sweet Potato Almond Cake

- 400 g flour
- 1 cube fresh yeast
- 150 ml lukewarm milk
- 180 g sugar
- 250 g cooked potatoes from the day before (peeled)
- 150 g margarine
- Salt
- 1 untreated lemon (zest)
- 250 g almond flakes

Sift the flour into a bowl and make a well in the center. Crumble the yeast, stir with 5 tbsp milk and 1 tsp sugar until smooth, then pour into the well. Add a little flour, knead, cover and let rise in a warm place for about 30 minutes.

Meanwhile press the potatoes through a potato ricer and mix with margarine, remaining sugar, milk, a pinch of salt and lemon zest. Fold the potato mixture into the dough and knead thoroughly. Let rest again for at least 45 minutes. Preheat the oven to 200 °C (convection).

Line a baking sheet with parchment paper. Roll out the dough and place it on the sheet. Prick several times with a fork, top with almond flakes and bake in the preheated oven for 30–40 minutes until golden yellow. Remove, cool, cut into pieces and serve.
