Sugar-Free Oatmeal Cookies

- 2 ripe bananas
- 2 tbsp Coconut oil
- 100 g soft rolled oats
- 0.5 tsp Baking powder
- 90 g spelt flour type 1050
- 0.5 tsp cinnamon
- 0.3 tsp vanilla powder
- Salt
- 2 tbsp raisins

Peel the bananas and mash them evenly with a fork in a bowl. Warm the coconut oil until liquid, then mix it with the banana.

Combine oats, baking powder, spelt flour, cinnamon, vanilla powder, and salt in another bowl. Add the banana‑coconut mixture and raisins to the dry ingredients and stir briefly so the dough is just combined. Cover the dough and let rest for about 15 minutes.

Drop the dough into 12–15 spoonfuls onto a baking sheet lined with parchment paper. Flatten each scoop and shape it into a round cookie (the dough keeps its shape during baking).

Bake in a preheated oven at 180 °C (fan‑forced 160 °C; gas: level 2–3) for 10–12 minutes. Remove from the oven and let cool on the sheet for 10 minutes.
