- 500 g sweet cherries
- 1 lemon (juice)
- 80 g sugar (to taste)
- 20 ml Cassis
- 2 egg whites

Wash, pit, and stem the cherries, then blend with lemon juice. Strain through a fine sieve and mix the sugar with the liqueur into the fruit purée. Whisk the egg whites to half‑firm peaks, fold them into the fruit mixture, and churn in an ice cream maker until creamy frozen. Alternatively, pour into a container and freeze for at least 5 hours, stirring vigorously occasionally.
