Apple-Beet Parfait

Ingredients
- 700 g small beets
- 0.5 stick cinnamon
- 0.5 tsp Fennel seeds
- 0.5 stick licorice root
- 200 ml apple juice
- 3 tbsp sugar
- 1 Egg white

Wash the beets, place them in a small pot and cover with water. Add the cinnamon stick with fennel seeds, licorice root and ½ tsp salt. Bring to a boil. Simmer on medium heat for 40-50 minutes.

Remove, peel, let cool and cut into very small cubes. Blend the cubes with apple juice until smooth. Pour the mixture into a shallow dish and freeze for about 5 hours, stirring well every 30 minutes to form small ice crystals. After 2 hours fold in the whipped egg white. Let the sorbet soften slightly, fill a piping bag with a star tip and pipe into glasses. Garnish with apple slices and beet leaves as desired before serving.
