Ingredients
- 2 kg cherries
- 1 lemon
- 1 kg gelatin sugar (2:1)
- 4 handfuls elderflowers

Wash, clean, pit, and seed the cherries. Wash the lemon, halve it, and squeeze out the juice. Combine with the lemon juice and gelatin sugar; bring to a boil and simmer for 3–4 minutes until bubbling. Remove from heat and stir in the strained elderflowers.

Immediately fill hot-washed jars with the mixture and let them cool upside down for 10 minutes. Then turn them right side up and allow to cool completely. Label for storage and keep in a cool, dark place.
