Cherry Clafouti

Ingredients
- 4 eggs
- 100 g sugar
- 1 tsp bourbon vanilla
- 80 g flour
- 1 tbsp semolina
- a pinch salt
- 1 tsp Baking powder
- 150 ml milk
- 500 g cherries
- butter (for the pan)

Beat the eggs with sugar and vanilla on high speed for about 7 minutes until the mixture forms stiff peaks. Add flour, semolina, salt, baking powder, and milk to the egg mixture and fold in gently.

Let the batter rest in the refrigerator for 30 minutes. Wash and pit the cherries. Preheat the oven to 180°C (350°F). Grease a tall glass ramekin or a pie tin (28 cm diameter) or 4-6 smaller tins. Pour one-third of the batter into the pan, spread half of the cherries over it, then pour the remaining batter on top. Bake for 30–45 minutes until golden brown. Check with a toothpick; if needed, bake longer or cover with foil early.
