Ingredients
- 750 g low‑fat quark
- 1 small organic orange
- 1 Vanilla bean
- 4 eggs
- 1 pinch salt
- 125 g honey
- 250 g crumbly cream cheese
- 60 g spelt whole‑grain semolina (4 tbsp)
- 2 tbsp cocoa powder (for dusting)

Drain the quark well.

Separate the eggs. Beat the egg whites with a pinch of salt into stiff peaks. Whisk the yolks and honey with a hand mixer until creamy. Fold in the quark, 1 tsp orange zest, 4 tbsp orange juice, vanilla bean pulp, cream cheese and semolina. Gently fold in the meringue.

Line a springform pan with parchment paper, pour in the mixture and smooth the top. Bake at 180 °C (160 °C fan) for 1 hour, covering with foil if needed.

Remove from oven and let cool in the pan for 30 minutes. Place a cake template on top and dust with cocoa powder.
