Ingredients

  • 500 g fresh spinach
  • Salt
  • 175 g ricotta
  • 1 tsp lemon zest
  • 120 g freshly grated Parmesan
  • 2 Eggs
  • 1 egg yolk
  • 200 g Flour
  • pepper (ground)
  • nutmeg
  • butter (for the pan)
  • parsley (for garnish)

Instructions

    Wash, trim and blanch the spinach in salted water. Shock, squeeze dry, finely chop, then knead with ricotta, lemon zest, 60 g parmesan, eggs, egg yolk, and flour into a smooth dough. Adjust flour as needed. Season with salt, pepper, and nutmeg. Using a spoon, form gnocchi, place on a floured board, and drop them into boiling salted water. If they fall apart, knead in extra flour or an egg. Simmer for about 8 minutes until cooked.

    Preheat the oven to 180°C (356°F) fan‑forced.

    Remove with a slotted spoon and place in a fireproof, buttered dish. Sprinkle with remaining cheese and bake in the preheated oven for 4–5 minutes until golden. Garnish with parsley before serving.
