Ingredients

  • 1.5 kg flank steak (pre-order at butcher)
  • 2 onions
  • 2 cloves garlic
  • 1 bunch parsley
  • 1 tsp pepper (crushed)
  • 80 ml oil
  • 1 tbsp Olive Oil

Instructions

    Remove the skins from the onions and dice them finely. Peel the garlic cloves and mince them. Wash the parsley, shake off excess water, pluck the leaves from the stems and chop. Mix all with the oil and marinate the meat for at least 1 hour.

    Before cooking, wipe off the excess marinade, let it drain, then sear the steak in a large pan over hot olive oil, about 1 minute per side.

    Brush the steak with remaining marinade, cover with foil and bake in a preheated oven at 80 °C for about 15–20 minutes to rest and absorb flavors.

    Serve by slicing thinly against the grain on a wooden board. Enjoy with plenty of fresh salad.
