Trout Burger

Ingredients

  • 1 slice toast bread
  • 2 red onions
  • 1 tbsp butter
  • 300 g fresh trout fillet (boneless)
  • 100 g smoked trout fillet
  • 1 tbsp finely chopped dill
  • 2 Eggs
  • Salt
  • Pepper
  • 1 tsp lemon juice
  • 2 tbsp clarified butter
  • 2 Tomatoes
  • 1 handful young spinach leaves
  • 4 burger buns
  • 4 tbsp Sour cream

Instructions

    Coarsely cube the bread and grind in a food processor. Peel and finely chop one onion; slice the other into rings. Sauté the onion cubes in 1 tsp hot butter. Wash, dry, and coarsely cut the fresh trout fillet with the smoked trout fillet. Pulse in the processor. Knead about half of the breadcrumbs, onion cubes, dill, and an egg together. Season with salt, pepper, and a splash of lemon juice. Shape into 4 patties; if wet, mix in more toast bread.

    Whisk the second egg. Dip the fish patties first in the egg, then coat in remaining breadcrumbs. Fry in hot clarified butter for about 5 minutes per side until golden brown.

    Sauté onion rings in a separate pan with leftover butter until translucent. Wash tomatoes, remove stems, and slice thinly. Rinse spinach, pat dry. Horizontally split buns and toast as desired. Layer each bun with spinach, 1 tbsp sour cream, trout patties, tomato slices, and onion rings. Top with the bun lid and serve immediately.
