Ingredients
- 60 g Butter
- 50 g flour
- 0.5 l milk
- Salt
- white pepper (ground)
- nutmeg
- 100 g low-fat quark
- 100 g grated medieval Gouda
- 80 g grated Butterkäse
- 4 egg yolks
- 8 egg whites
- butter (for the pan)
- breadcrumbs (for the pan)
- parmesan (for sprinkling)
Instructions

Melt butter, stir in flour and let it foam, gradually pour in milk while stirring and simmer for a few minutes, season with salt, pepper and nutmeg, then remove from heat.

Mix quark, both cheeses and egg yolks. Grease the bottom of the 20 cm copper soufflé dish or small ramekins and dust with breadcrumbs.

Beat egg whites to stiff peaks, fold in one quarter into the cheese mixture, then gently fold in the remaining whites and fill the pan about three‑quarters full.

Bake in a preheated oven at 180°C on the middle rack for about 30–40 minutes until golden brown. Remove from oven, sprinkle with parmesan and serve immediately.
