Poached Cinnamon Pear with Chocolate Sauce

- 1 untreated lemon (zest and juice)
- 0.5 cinnamon stick
- 2 tbsp sugar
- 4 fresh pears (e.g., butter pears)
- 100 ml whipping cream
- 50 g dark chocolate (min. 70% cocoa)
- 50 g semi‑dark chocolate (≈50% cocoa)
- 1 tsp pear brandy (optional)
- 4 scoops ice cream (e.g., cinnamon)
- cinnamon powder (for dusting)

Bring about 375 ml water with lemon zest, squeezed lemon juice, cinnamon stick and sugar to a boil. Meanwhile, gently peel the pears so that the stem remains attached. Flatten the bottom of each pear and remove the core with a melon baller. Place the fruits in the boiling liquid and poach gently for about 10 minutes, turning once if desired. Remove the pears from the broth, drain, and let them cool to lukewarm.

For the chocolate sauce, bring the cream to a boil. Add the chocolate pieces and melt into a smooth sauce. Season with pear brandy to taste, if using.
