Cheese Pizza with Red Onions and Spinach

- 500 g flour
- 1 tsp salt
- 25 g fresh yeast
- 1 tsp sugar
- 200 ml warm water
- 1 tbsp Olive Oil
- vegetable oil (for the baking sheet)
- 150 g spinach
- 3 red onions
- 1 tbsp Olive Oil
- Salt
- pepper (ground)
- 140 g Reblochon cheese

In a large bowl combine flour and salt, create a well in the center. Dissolve yeast and sugar in warm water, add olive oil, pour into the flour well. Mix from the center with flour, knead vigorously until dough is smooth and releases easily from the bowl. Cover and let rise in a warm place for about 60 minutes until nearly doubled.

Meanwhile, clean and wash spinach. Peel red onions and slice thinly. Heat olive oil in a pot, add spinach, stir until wilted while still slightly moist. Season with salt and pepper.

Preheat oven to 230°C fan. Roll dough on floured surface into four circles. Distribute spinach and onion rings over dough. Dice cheese and scatter on top. Place two oiled baking sheets in the preheated oven, bake for 20‑25 minutes, swapping sheet positions halfway through.
