Turkish Pizza with Lamb Mince, Pistachios and Dates

Ingredients

  • 500 g flour
  • 1 tsp sea salt
  • 0.5 cube yeast (ca. 21 g)
  • 1 tsp sugar
  • 60 g pistachios
  • 3 spring onions
  • 1 Garlic clove
  • 8 dried dates
  • 2 Tomatoes
  • 400 g lamb mince
  • 2 tbsp Tomato paste
  • 1 tsp Pul Biber
  • 1 tsp cumin (ground)
  • 1 tsp allspice (ground)
  • 5 tbsp olive oil
  • pepper (from grinder)
  • flour (for working)

Instructions

    Mix the flour with the salt in a bowl. Create a well. Stir the yeast with the sugar and about 250 ml lukewarm water, then pour into the flour. Knead everything into a smooth dough, adding more flour or water if needed. Cover and let rise for about 1 hour in a warm place.

    Roast the pistachios in a dry pan without oil, remove from heat and cool. Wash and trim the spring onions, cut into rings. Peel and finely chop the garlic. Dice the dates finely. Wash the tomatoes, remove stems and dice small.

    Combine everything with lamb mince, tomato paste, spices and 3 tbsp oil. Season with salt and pepper.

    Preheat the oven to 220 °C (425 °F) with upper and lower heat.

    On a floured surface knead the dough again, divide into 8 equal balls. Roll each into round flatbreads about 20 cm in diameter. Place on a baking sheet lined with parchment paper, top with the minced mixture leaving a small border. Bake in the oven for 15–20 minutes until golden brown.

    Remove from the oven, let rest 3–5 minutes and serve e.g. with tomato salsa and yogurt dip.
