Ingredients
- 1 Garlic clove
- 350 ml dry white wine
- 300 g Emmental
- 300 g Gruyère cheese
- 10 g starch
- 40 ml kirsch
- Salt
- Pepper (freshly ground)
- a pinch nutmeg
- cubed bread (e.g., rye loaf)
Instructions

Prepare the fondue pot or four serving bowls, lightly crush the garlic clove, halve it and rub the pots with it to warm them.

Heat the wine in a saucepan while grating the cheese; add the grated cheese to the wine and stir constantly over medium heat until a smooth cream forms.

Whisk the starch with a little kirsch until smooth, fold into the cheese mixture, let it thicken once. Season with salt, pepper, and nutmeg.

Fill the preheated bowls, lightly pepper them, and serve with bread cubes as desired.
