Ingredients

  • 600 g cheese at least 2 varieties (e.g., Gruyère and Emmental)
  • 1 Garlic clove
  • 300 ml dry white wine
  • 2 tsp cornstarch
  • 40 ml cherry brandy
  • pepper (ground)
  • nutmeg

Instructions

    Rinse the cheese and cut into small cubes or roughly grate. Peel and halve the garlic. Rub the fondue pot with the cut sides of the garlic. Pour in the wine and first add the harder cheese. Warm slowly while stirring. When the cheese almost melts, stir in the remaining cheese until the fondue gently simmers.

    For binding, whisk a little cornstarch into cherry brandy and fold it into the cheese while stirring. Season the smooth, creamy cheese sauce with pepper and nutmeg.

    Place the cheese fondue on a warming stand to keep warm and serve with white bread cubes for dipping as desired.
