Cheese-filled Dough Rolls

Ingredients
- 12 sheets of yufka dough
- 600 g sheep cheese
- 2 Eggs
- 2 sprigs borage
- 4 tbsp spinach (coarsely chopped)
- Salt
- Pepper
- oil for frying

Grate the sheep cheese into a bowl. Wash the borage, pick off some leaves and finely chop them; optionally add a few flowers. Separate the eggs; beat one egg white until stiff peaks form. Mix the yolks into the grated cheese, stir smoothly, season with salt and pepper, then fold in spinach and borage. Gently fold in the beaten egg white.

Heat the frying oil in a pot (it is hot enough when bubbles begin to rise on the handle of a wooden spoon held in the oil).

Lay the dough sheets side by side on a lightly floured work surface; distribute the filling onto each sheet, piling it in the lower third. Brush the edges with egg white and roll the sheets into rolls around the filling.

Fry the dough rolls in the hot oil for 2–3 minutes until golden yellow, drain on paper towels, garnish with borage, and serve warm or cold.
