Herring Tartare with Cucumber

Ingredients
- 1 cucumber
- 200 g cream cheese (plain)
- 3 tbsp Plain yogurt
- 2 tbsp crème fraîche
- Salt
- black pepper (freshly ground)
- Lemon juice
- 6 herring fillets (in oil)
- 2 tbsp mayonnaise
- fresh herbs for garnish (e.g., dill, sage, parsley, rosemary, chervil)

Wash the cucumber, cut it crosswise in half; slice one half into very thin rounds or shave and dice the other half into small cubes. Mix the cream cheese with yogurt and crème fraîche, season with salt, pepper, and lemon juice. Stir in the cucumber cubes. Drain the herring fillets well, pat dry with kitchen paper, and cut into small cubes.

Arrange the cucumber slices in a roof‑tile pattern as a ring on a plate. Place a round cutter (6 cm diameter) in the center, fill it halfway with cucumber salad, then top with herring cubes. Carefully lift the ring upward and serve the tartare garnished with a dollop of mayonnaise and fresh herbs.
