Shortcrust Olive Rolls

Ingredients
- 450 g frozen puff pastry
- 120 green and black olives (pitted)
- 80 g Parmesan cheese
- 3 sprigs rosemary
- parsley
- 1 egg yolk
- 2 tbsp milk

Let the puff pastry thaw. Finely chop the olives in a food processor. Grate the parmesan. Rinse the herbs, dry, and finely chop them. Mix the olives, herbs, and parmesan.

Lay the pastry sheets on top of each other and roll into a 40x30 cm rectangle on a floured surface. Whisk together the egg yolk and milk. Brush the pastry lightly with this mixture. Spread the olive filling evenly over the pastry, leaving about a 2 cm border.

Roll the dough lengthwise and brush the remaining egg‑milk mixture over it. Slice the roll into finger‑thick rounds and place them on two parchment‑lined baking trays with some space between each round. Bake in a preheated oven at 200 °C (gas: level 3–4, fan: 180 °C) for about 20 minutes.
