Cheese and Mushrooms on Toasted Bread

Ingredients

  • 4 medium farm loaves
  • 300 g Halloumi (Cypriot feta cheese)
  • 4 large button mushrooms
  • 3 tbsp olive oil
  • 50 g cream cheese
  • 2 tsp lemon juice
  • 0.5 tsp paprika powder
  • 1 tsp chopped thyme
  • 1 tsp chopped rosemary needles
  • Salt
  • Pepper

Instructions

    Slice the cheese into 4 pieces. Clean the mushroom caps. Brush bread, cheese and mushrooms with oil and grill on a hot grill, turning once.

    Whisk cream cheese with lemon juice, paprika, herbs, salt and pepper, taste to adjust.

    Top each slice of toast with a mushroom cap, spoon some cream cheese mixture over it, then add a piece of grilled cheese. Finish by sprinkling extra pepper.
