- 250 g old ciabatta
- 50 g arugula
- 3 eggs
- 300 g freshly grated Pecorino
- Salt
- pepper (from grinder)
- olive oil (for frying)

Soak the ciabatta in lukewarm water for about 15 minutes, then squeeze out excess liquid and crumble. Wash, dry, and finely chop the arugula. Mix the crumbled bread with eggs, Pecorino, salt, and pepper until well combined. Cover and refrigerate for at least 3 hours to allow flavors to meld.

Shape small balls from the mixture and fry in hot oil for 3-4 minutes per side until golden brown. Drain on paper towels and serve with tomato sauce if desired.
