Ingredients

  • 4 salad leaves
  • 1 yellow bell pepper
  • 1 Zucchini
  • 1 small eggplant
  • 30 ml olive oil
  • Salt
  • Pepper (freshly ground)
  • 1 basil sprig
  • 2 Tomatoes
  • 4 ciabatta rolls
  • 40 g grated Parmesan

    Wash and dry the salad leaves. Clean, wash, and slice the bell pepper into strips. Wash, clean, and thinly slice the zucchini and eggplant lengthwise. Brush with olive oil.

    Heat a non‑stick grill pan without fat and grill the vegetables on all sides for 8–10 minutes total, seasoning with salt and pepper. Meanwhile, wash and dry the basil, pluck leaves from stems, and slice the tomatoes.
