Ingredients
- 1 handful herbs (e.g., sorrel, lemon balm, dill)
- 2 Spring Onions
- 1 Avocado
- 250 g yogurt
- 0.5 untreated lemon (zest and juice)
- 1 tsp wasabi paste
- Salt
- Pepper (freshly ground)

Rinse the herbs, shake dry, pluck leaves, and finely chop. Wash, trim, and slice the spring onions into thin rings. Peel the avocado, halve it, remove the pit, and dice into small cubes.

Combine the yogurt with a touch of lemon zest, the chopped herbs, sliced spring onions, and diced avocado. Season with lemon juice, wasabi, salt, and pepper before serving.
