Ingredients
- 1 lemon
- 4 tbsp sugar
- 300 ml champagne
- 3 sheets gold leaf (from craft store)
- 4 sheets gelatin

Wash lemon hot, dry rub, peel zest with a paring knife. Juice lemon, combine juice and zest with 200 ml water and sugar over low heat until it boils. Let cool, remove lemon zest.

Mix champagne with the gold leaf, add to syrup. Heat 6 tbsp of the liquid in a small pot, dissolve soaked gelatin in it, stir into remaining liquid. Pour into a bowl and refrigerate to set, stirring occasionally so the gold flakes distribute evenly. Once the gelée is thickened, place in champagne glasses and continue setting. It will be semi-firm.
