Turkey Roast According to Grandma's Recipe

Ingredients
- 1 Shallot
- 1 Garlic clove
- 2 tbsp olive oil
- 100 g walnut kernels
- 1 handful parsley
- 1 egg yolk
- 0.5 untreated lemon zest
- 2 tbsp breadcrumbs
- Salt
- pepper (from grinder)
- 1 kg turkey roll roast
- 120 g pancetta slices

Preheat the oven to 180°C with fan and top heat.

Peel and finely dice the shallot and garlic. Sauté together in a hot pan with 1 tbsp oil until translucent. Transfer to a bowl. Finely chop the walnuts. Wash the parsley, dry by shaking, pluck the leaves and also finely chop. Add the walnut mixture, egg yolk, lemon zest, and breadcrumbs to the bowl and mix well. Season with salt and pepper.

Rinse the roast, pat dry, and roll it apart. Cover about two-thirds of the pork with pancetta slices, spread the nut mixture on top, then re-roll. Season the outside with pepper, wrap the remaining pancetta around it, and tie with kitchen twine. Place on a greased baking tray and brush with oil. Roast in the oven for about 40 minutes until golden brown.

For serving, remove the turkey roast from the oven, cut off the twine, slice into pieces, and arrange on plates or a platter. Serve with spinach if desired.
