Ingredients

  • 200 g sweet potatoes
  • 2 onions
  • 400 g celery stalks
  • 2 tbsp butter
  • 800 ml broth
  • Salt
  • Pepper (freshly ground)
  • 100 g blue cheese
  • 2 tbsp chives

Instructions

    Peel the potatoes and onions, then dice them into small cubes. Wash, trim, and cube the celery as well.

    In a pot melt the butter and sauté the onion until translucent. Add the vegetables, cook briefly, then pour in the broth. Season with salt and pepper and simmer over medium heat for about 25 minutes.

    Cube the blue cheese and lightly mash it with a fork. Taste the soup, stir in the cheese, and ladle into warmed bowls. Sprinkle with chives before serving.
