Ingredients

  • 1 kohlrabi
  • Salt
  • Pepper
  • 30 g Butter
  • 20 g flour
  • 0.5 l milk
  • 100 g medieval Gouda
  • 50 g Roquefort
  • 100 ml light grape juice
  • Grated nutmeg

Instructions

    Shave the kohlrabi (set aside small leaves) and slice finely. Boil in 200 ml lightly salted water for 5 minutes. Drain and reserve the cooking liquid.

    Heat butter. Sauté flour in it. Gradually stir in milk and reserved kohlrabi cooking liquid, bringing to a boil.

    Grate Gouda, cut Roquefort into small pieces. Add the cheeses to the soup and melt while stirring. Pour in grape juice, heat, and season with salt, pepper, and nutmeg. Add the sliced kohlrabi. Serve in soup bowls and garnish with kohlrabi leaflets.
