Milk Soup with Vegetables

Ingredients

  • 500 g broccoli
  • 250 g carrots
  • 500 ml vegetable broth
  • 500 ml milk
  • 20 g butter
  • 1 small onion
  • 150 g cheddar cheese
  • Salt
  • white pepper (freshly ground)
  • Nutmeg (freshly grated)

Instructions

    Clean the broccoli and cut into florets. Slice the stems into rounds. Peel, wash, and dice carrots. Peel and dice the onion. Add butter to a large pot, heat it, and sauté the onion cubes until translucent. Add the vegetables and sauté briefly, then pour in the broth and milk, cover, and simmer for about 10 to 15 minutes.

    Grate the cheddar finely and stir 100 g into the soup. Season with salt, pepper, and nutmeg. Ladle the soup into bowls and sprinkle with the remaining cheese before serving.
