Ingredients

  • 250 g red cabbage
  • 400 g beetroot
  • 2 tbsp Apple cider vinegar
  • 1 tbsp Lemon Juice
  • 1 pinch whole cane sugar
  • Salt
  • Pepper
  • 2 stalks celery
  • 1 apple
  • 3 tbsp Walnut Oil
  • 30 g walnut kernels

    Wash, trim and finely slice or shred the red cabbage. Peel the beetroot and grate it into fine sticks. Combine both in a bowl and mix with vinegar, lemon juice, sugar, salt, and pepper; let rest in the refrigerator for about 30 minutes.

    Meanwhile wash, trim, and cut the celery into slices. Peel, quarter, core, and grate the apple. Mix both with the oil into the salad, season to taste, and divide among four bowls. Sprinkle with chopped walnut kernels.
