Baked Potatoes with Cheese and Bacon

Try baked potatoes topped with cheese and bacon from Spoonsparrow—perfect as a lunch or side for grilling.

Ingredients

  • 4 large waxy potatoes
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp olive oil
  • 200 g Gouda cheese
  • 40 g sour cream (10% fat; 4 tbsp)
  • 150 g corn kernels (4 tbsp)
  • 70 g diced ham (4 tbsp)
  • 1 Spring onion

Instructions

    Line a baking sheet with parchment paper. Wash and scrub the potatoes, cut them in half lengthwise, and place them cut side down on the sheet. Sprinkle with salt and pepper, then brush with olive oil. Bake in a preheated oven at 200 °C (180 °C fan; gas: level 3) for about 40 minutes.

    Meanwhile grate the Gouda and mix it with sour cream, corn, and ham cubes. Clean and slice the spring onion into rings, then stir them into the cheese mixture.

    Remove the potatoes from the oven, flip them over, and spread the cheese‑ham mixture on top. Return to the oven for about 15 minutes until the baked potatoes are golden brown.
