Duchess Potatoes

Ingredients

  • 750 g waxy potatoes
  • 50 g butter
  • 2 egg yolks
  • Salt
  • pepper (ground)
  • Nutmeg (freshly grated)
  • 2 tbsp melted butter
  • oil (for the baking sheet)
  • thyme (for garnish)

Instructions

    Preheat the oven to 220°C with top and bottom heat.

    Peel the potatoes and boil in salted water for about 25 minutes. Drain and let steam dry.

    Press the cooked potatoes through a potato masher and mix with butter and egg yolks. Season with salt, pepper, and nutmeg.

    Transfer the puree into a piping bag fitted with a large star tip and pipe rosettes onto an oiled baking sheet. Brush with melted butter and bake in the oven for about 10 minutes until golden brown. Serve garnished with thyme.
