The curry sauce from Spoonsparrow makes every dish a real highlight and pairs wonderfully with vegetables, meat and bread.

Ingredients

  • 2 cloves garlic
  • 1 Shallot
  • 1 red chili pepper
  • 0.5 tsp chopped coriander root
  • 0.5 tsp chopped lemongrass
  • 0.5 tsp cumin
  • 1 tsp turmeric
  • 2 tbsp Vegetable oil
  • 150 ml poultry broth
  • 200 ml coconut milk
  • Salt

Instructions

    Peel and roughly chop garlic, shallot, coriander root, and lemongrass. Wash, halve, trim, and chop the chili pepper. Combine all with cumin and turmeric in a mortar to form a paste.

    Sauté the paste in hot oil until fragrant, then deglaze with broth. Let simmer briefly, add coconut milk, and cook for about 10 more minutes until slightly thickened. Season with salt at the end.
