- 4 Carrots
- 1 orange
- 250 g Greek yogurt
- 1 tbsp honey
- 4 tbsp apple sauce
- 30 g hazelnut kernels
- 30 g chopped walnut kernels
- 30 g pistachio kernels
- 3 tbsp Lemon juice
- sugar
- Salt
- pepper (ground)
- watercress (for garnish)
- orange fillets (for garnish)
Instructions

Peel the carrots and use a vegetable peeler to cut them into strips. Peel the orange with a knife down to the flesh, then dice it. Mix the yogurt with honey and apple sauce.

Coarsely chop the nuts and pistachios. Combine the carrot strips with the orange cubes, lemon juice, and nuts. Season with sugar, salt, and pepper. Arrange the salad in bowls and garnish with watercress. Serve the apple-yogurt sauce in small cups alongside the salad.
