Salad with White Beans, Tomatoes and Soft Wheat

Ingredients

  • 300 g peeled white bean
  • Salt
  • 4 tomatoes
  • 150 g soft wheat kernels (e.g., Ebly)
  • 2 red onions
  • 150 g feta cheese
  • 1 untreated lemon
  • 50 g black olives (pitted)
  • 50 g green olives
  • 4 tbsp olive oil

Instructions

    Blanch the thick beans in boiling salted water for about 5 minutes. Shock them in cold water, drain and set aside. Wash and halve the tomatoes, then slice thinly. Cook the wheat according to package instructions, strain in a sieve, cool.

    Peel and slice the red onions into strips. Dice the feta into small cubes. Rinse the lemon hot, grate its zest on a kitchen grater. Halve the lemon and squeeze one half for juice. Slice the pitted olives into rounds.

    Combine all prepared ingredients except the lemon juice in a large bowl. Just before serving drizzle with lemon juice and olive oil. Season with salt and pepper. Serve together with whole olives.
