Grilled Chicken Salad with Cherry Tomatoes and Heart Croutons

Ingredients
- 500 g chicken breast fillet (ready to cook, skinless)
- Salt
- Pepper (freshly ground)
- 2 slices toast bread
- 250 g mixed salad (chicory, radicchio, lettuce, lamb's lettuce, arugula)
- 350 g cherry tomatoes
- 2 tbsp white wine vinegar
- olive oil

Wash the meat, pat dry, season with salt and pepper, then grill or cook in a grill pan over high heat for about 10 minutes, turning occasionally.

While cooking, cut small heart-shaped pieces from the toast bread using a heart cutter and grill until golden brown.

Wash the salad leaves, rinse, spin dry, and tear into bite-sized pieces. Wash the tomatoes, remove stems, and halve or quarter them.

For the vinaigrette whisk together vinegar with 4 tbsp oil, season with salt and pepper, then toss with the salad and tomatoes.

Slice the cooked chicken into strips, arrange on a plate with the salad, and garnish with heart croutons before serving.
