Carrot Sesame Burger with Avocado

Ingredients
- 400 g carrots (4 carrots)
- 1 egg
- 30 g breadcrumbs (3 Tbsp)
- 10 g tahini (1 tsp)
- Salt
- Pepper
- a pinch ground cumin
- a pinch ground coriander
- 4 soft buns
- 30 g salad cream (2 tbsp)
- 40 g sour cream (2 tbsp)
- 2 tbsp lemon juice
- 1 ripe Avocado
- 2 tbsp Vegetable oil
- 1 Red Onion
- 40 g arugula (bundle)
- 80 g mango chutney (4 tbsp)
Instructions

Peel and grate carrots coarsely. Mix with egg, breadcrumbs, and tahini paste into a firm dough; season with salt, pepper, cumin, and coriander.

Halve buns horizontally and toast cut sides under preheated oven grill until golden brown. Remove and set aside.

Whisk salad cream with sour cream; season with salt, pepper, and a splash of lemon juice.

Halve avocado, remove pit, peel, slice flesh into strips, and mix with remaining lemon juice.

Shape dough into 4 patties. Heat oil in a pan. Fry patties over medium heat for about 6 minutes per side until golden brown.

Peel onion and cut into thin rings. Wash arugula and dry thoroughly.

Spread salad cream mixture on bun halves; top with avocado strips, one carrot patty, onion rings, drizzle chutney, cover with arugula, and place top bun halves.
